Lamb is good Mutton is strong and not so good. Lamb 
with a little rosemary, garlic and fresh ground black 
pepper over a smokey fire is almost beyond description.

Ries, If you let me know what your fisherman friend 
says about the Copper River reds, I can check with the 
LOCAL market (NOT Safeway!) about shipping one down if 
it isn't available from there. It'd need a solid 
address to ship to, perhaps your Mom's, it'd save you 
from hauling it half way across the state.

You also might consider halibut, my personal favorite 
fish flavor.
