Daniel:

An "A" frame on each end of a spit wouldn't be stable. They need to be 
either single legs driven into the ground or tripods.

Making a series of hooks or pegs to adjust the height of the spit could be 
done a number of ways. Riveting or collaring would be easier than welding 
them on but punching and drifting a leg on each end for movable pegs would 
keep it lighter and look cool.
