Andy, its not too late but there's not enough budget to begin 
to consider stainless.  Also, I found a large and reputable 
plater out here, Duncan Group, who have a stain after galv.  
I talked with them today.  It is only recommended in parking 
garages and other non-critical areas as it is not 
particularly attactive.  They have tried it on several 
residential projects and have had to bead blast it off to 
satisfy the customers.  It sounds like is is a thin stain and 
not a chemical that reacts with the zink.

They do have several paint coatings that they have engineered 
for coating over galvanized, including acrylic, polyutethane 
and a hard and soft powder coat.  They apply and warranty.
