For steel, most listing start with plate at 3/16 inch thick, but also call 
it sheet up to 4 gauge which is about 0.224 so there is some overlap.  In 
fact you can buy coiled plate starting at 3/16 thick up to 1/2 inch thick --  
but it is called coiled plate.

In aluminum 1/8 inch is the common cut off point between sheet and plate 1/8 
and below being sheet and 1/8+ being plate. For what it is worth the cutoff 
point between sheet and foil is 0.001 inch.  0.001 and below is foil, above 
is sheet.
