Allow me to play the devil's advocate here.  It costs
about the same here in South Carolina to have a deer
processed.  I really don't mind it at all.  I tell
them how much burger, summer sausage, breakfast
sausage, and snack sticks I want.  I get a call a week
or two later and all my meat is packaged up and ready
to go.  The burger and other non processed meat is
frozen.  I don't have to buy any equipment, casings,
spices or what ever.  I wouldn't have it any other way.
