LONDON (Reuters) - Peeling onions without melting in tears, it is what propose 
the Japanese researchers who announce to have identified the enzyme responsible 
for the irritation of lachrymal glands. It could to be first stage towards 
creation of onion genetically modified of which taste would be intact, but 
which would not make cry when it is cut, explained Shinsuke Imai, of House 
Foods Corporation of Chiba, in Japan, whose team publishes its conclusions in 
the Nature newspaper. "We isolated in onion an enzyme responsible for the 
formation for the lachrymal factor, the compound which gives birth to the 
tears" explains Imai. With his team, he projects to continue his work to 
determine if this enzyme plays a role in the taste of onion, the objective 
being to create a genetically modified onion which would not produce the enzyme 
accused while preserving its gustatory qualities.
