Fine business, Steve.

That's most resourceful.  That set will be much happier with a ground.  
Your AC safety ground will do ok.  The ground pin on the outlet is 3/16 
in diameter.

The Sony headset will be louder if you use a step down transformer 
between the tube plate circuit and the 'phones.  (That also keeps HV off 
your head. :-) ) An output transformer from an AA Five would be near 
optimum.  Even a transformer removed from a wall wart would help.  
Impedance matching is like horseshoes or hand grenades, close counts.
