I dont know about the ProIII but the IC-7000 has a menu selection to read the S-meter or not.

Get it onto a nice signal. Hit the lock button for 2 seconds like you
found to do, the S-Mater reading is usually first goes something like
this. 9, being the S meter reading, a very short pause then says
14.230.00 MHz
I'll play a bit with my IC-7000 this weekend and see how it work,but the
UT-102 used to work this way a number of years ago.
