You can still use a conventional Disk Image software that is normally used on PC's (Ghost, Acronis,etc). Most of then will work when you boot off the "restore CD" and start the process from there. The downside is that you can't directly save it on a mac formatted drive (but most can ready FAT32/NTFS/Network Shares just fine). Not as user friendly, but they definitely work.
Just make sure to run it in volume/partition mode and carefully specific the windows partition (not the ENTIRE drive, where you could accidentally erase your mac files as well if they are on the same physical drive).
Thankfully, the mac bootloader stuff is stored on a different location then windows does and changing the "boot device" in "startup disk" merely changes the location in memory the computer looks at first when starting up, so you don't have to worry about too much about that part getting messed up.
