I have an old EICO RF probe. The body is plastic. The shielded cable is
terminated close to the pin and "guts". There has never been a problem with
hand capacitance and I feel more comfortable with a plastic shell around HV.

Use PVC pipe and wrap it up in aluminized foil. Be sure to ground it.
Otherwise (as has been suggested) use copper pipe and use PC board ends cut
and drilled to shape and solder them onto the copper body. That otta work
real nice (and copper pipe could be had in just about any dimensions.
