If it comes down to desoldering the can the old crystal can often be
salvaged with a good cleaning of the blank and mount.
The 6EA8 as mentioned by Garey is pretty much a universal replacement for
the often troublesome 6U8 and the slightly improved 6U8A. As with any swap
there are always exceptions.
