I only operate CW so can't offer you too many worthwhile suggestions on settings relevant to other modes.  I do not make any adjustments to menu items in 8-9.

On menu 7-7, I enable CW EDSP demod.  This greatly cuts down on  hiss by adding an audio cutoff at around 1800hz.  The down side is that strong sigs that make it through the IF passband when using the 1.8 (or wider) filters but that fall above 1800Hz will pump the AGC even though you can't here them.  To fix this, rotate the width knob to the 3:00 position to make the IF passband coincide with the audio cutoff.  When you switch to narrower filters, you need to re-center the knob.

An alternative is to add the INRAD "bonus mod", a .047 cap soldered across C3015 on the bottom of audio board.  This rolls off frequency response in CW mode only and works almost as well as the using the CW EDSP demod.  It has no effect in other modes or with CW DEMOD enabled.  Some ops feel the effect of the .047 cap is too dramatic.  You can try smaller values, like .022 or .015 and get somewhat less of an effect.
 
I usually keep menu item 8-4 set to "Tuned".  Compared to "FLAT", this increases front end gain on 12 and 10 meters and decreases it on 40, 80 and 160m.  Depending on band condx (quiet band of 40m or noisy on 10m) I will sometime switch back to FLAT.

I have Menu 5-0 set to 8.2-455.  This results in SSB filter settings:  NOR =  very wide +6kHz passband that is non single signal.  NAR1 = 2.4 KHz.  NAR2 = 1.8 KHz.  The reason I do this is that if  I'm trying to tune in an AM station, I can select SSB mode and NOR and tune back and forth to zero beat the carrier.  I'm then perfectly tuned to the AM signal and can select  AM to listen or operate.

BTW, if you find that AM synchronous detection doesn't stay locked,  look at the S meter and see where the noise is peaking, then turn down the RF gain to get a steady S meter indication about equal to the previous noise peaks.
