Many business type I systems use the E1P8 fleet map. After setting up you'll
need to listen for a while to the system to make sure conversations are not
"talking across" fleet channels. If so then the e1p8 is not correct. It
could be a custom fleet map, which is a $^&$$ to figure out. Another way to
tell if you are poss. right is most ids will end in -1 (or -01), which is
another clue that you probably have it right. In general most businesses
will use the first channel in their radio as their primary channel. Usually
programmed in their radios as 1A on their dial or display,  which will read
as xxx-1 on our scanners.
For example:
1A   xxx-1
1B   xxx-2
2A   xxx-3
2B   xxx-4
and so on....
Regarding business (smr) trunking systems you'll sometimes you'll see a -0.
This is a fleetwide channel. It is used to talk across all channels
simultaneously within their business. Keep in mind that a business can call
their channels anything they want to, so 1A maybe called "dispatch".

As for entering in the freqs, for moto systems any order is ok.. My personal
tip though-if you put the data channel(s) in first, the scanner will lock
onto the data channel faster-as compared to putting them in at the end.
