 You beat me to it.  I have used naval jelly, electrolysis, sandblasting, acid, wire brush over the years, but tried evaporust recently and am sold.  I will say that I have evolved to using wire brush or sandblast first and then dunking it in the evaporust because there is a finite amount of rust that the evaporust will absorb.  As you stated it uses chelation, which means the evaporust binds tightly to oxidized iron and pulls it into solution.   Eventually the solution will become saturated and it no longer works.  You will see it slow down over time.  The benefit for me of evaporust is that it gets into all of the small spaces that a sandblaster or wire brush can't.  It even excels over electrolysis in this aspect since electrolysis depends on line of sight between the cathode and anode to an extent.   I will also add that a bucket of marbles is useful in that they can be used to raise or lower the level of evaporust solution to cover the item at hand without buying more.  It is not cheap.
