Any mason with a masonry saw will be able to straiten out the first 
course with no problem. You can also use non shrink grout to take care 
of any really bad spots, but I doubt that would be necessary.

Around here tall walls are reinforced with rebar in the vertical cells 
every 4 feet or so and then those are filled with grout. Combined with 
he pilasters you will have no strength issues.

If you were going to put up your own forms, you might try approaching 
the mason with the possibility of help supply labor to offset the 
cost... bear in mind that being a mason tender is much more of a 
physical challenge than erecting forms   :>)
