this is why restaurant interiors are all stainless steel.
I suppose you can try a better clear coat, but none will hold up very long against bleach, strong industrial cleaners, ammonia, and citric acids, all of which are common in restaurants.
2 part clear epoxies, for boats?
Around here, the health inspector wont sign off on new restaurant kitchens if they are not all stainless steel, except for the chopping blocks.
