I did notice that "caddium" coated bolts have been replaced, at least
where I buy them, with galvanized ones. Not the heavy dip coating I
still see on some rigger's and marine hardware but a light uniform
coating. I worried about heating the cadmium plated bolts.
But cookware?

Huh. Well, further research is required. Whatever the coating is, it
makes for excellently durable cookware. (In my case, cupcake tins and
one pot cover, not the pots and pans in which we cook J. Random
Foodstuff.)
