3 phase is always the best.
I actually bought my present home with much more enthusiasm knowing there was 3 phase on the pole in front...
But its not available in many, many locations.
You can never have too much power.
I have 200 amps of 3 phase in the shop, and that covers most things.
I would say, though, for most people, 100 amps of single phase 220 is a target to shoot for.
You can run most any machine you would want on 100 amps- although some older, transformer style tig welders will use all 100 amps of it.
A 25 pound Little Giant doesnt take much power. Usually only a 1hp motor.
A decent compressor, though, can easily be 5hp.
