I am unclear from your description what you really need- If the piece
is staying on a ship, at sea, then stainless is probably the way to go.
Both aluminum and stainless are available in various degrees of polish.
This is not a standard item that is stocked in every small town metal
distributor, though.
And you pay extra for the shiny finish.
I often order stainless sheet from Alaskan Copper and Brass- they are
one of the largest non-ferrous distributors in the whole west.
They probably have aluminum in a shiny polish as well.

If all you need is a temporary heat shield, I use fireproof blankets
from the welding supply store for on site welding where there could be
damage to surrounding materials. Cheap, and re-usable indefinitely.

l -- 1st heat shield 1 inch above the deck and 1 inch from the
wooden frame bulkhead.
i -- 2nd heat shield 1 inch above the deck and 1 inch from the
1st heat shield.
the gap between the stove and the 2nd heat shield will be 12
inches.
