Hi Mark;
There are several solutions....as usual.
You can braze or silver solder stainless with a torch. With a
buzz box you can get a few sticks of stainless or hi-nickel rod
that'll do it.
If you buy galv couplers, you can simply grind the plating off in
the weld area and weld outside if possible.
A good particle mask will take out most of the zinc oxide.
If you silver solder or braze after grinding the coupling
temperature won't be as high...less fumes.
It helps to cover the threads with anti-spatter stuff ( welding
supply)
You can also work with the galv part submerged in water.
Muriatic acid, outside isn't much fume problem. It'll quiet down
after the zinc is gone. Neutralize the parts with baking soda in
water afterwards. Even distilled vinegar will work, if more slowly.
