Oh. I guess when you said "griddle plate" I thought you meant a flat 
fryingegg/pancake type grill.

If I was making a grill like for steaks I think I would go with round 
bar. Less surface in contact with grilling meat than there would be 
with square bar. Less sticking.

Or maybe I still don't get the picture?
