Take this idea one step further: Make arrangements with some development outfit to put the prints directly onto some accessible website. Then attendees of the conference (who would be given a username and password when they registered) could go to this website and annotate the photos. Maybe two layers of annotations - those by the photographer and those by others.
Allow contributions of other photo/video materials from attendees using their own equipment.
Now we just need someone to set all this up!

This is just a thought, related to the video idea, but maybe handing out
ten or twenty disposable cameras to the attendees... People could leave
them out at tables or wherever, and turn them in when they go. Once the
pictures are developed, they could be added to a web site and later,
through the web site, people could add comments. That way there would be
plenty of pictures of the event, and it would be sort of
self-documenting.
I think it would be a good addition to the videos.
