Ben,
A burner's nozzle is the end piece that is used to control the flame. To control
the flame without using a nozzle, the burner portal is cast to the same
dimensions as the widest part of a nozzle's interior. The burner is then placed
within the opening and moved back and forth until you find the "sweet spot."
Thereafter, the burner will act just exactly the same as if you were using a
nozzle. However, the refractory opening can take a lot more heat than an SS
nozzle would.

As to difficulties with lighting compressed air/fuel torches, just set the air
up with a needle valve, light, wait a minuet for the nozzle to warm up, and then
turn the air pressure up to wherever full out is for you.
