The idea of a baker's stone is two-fold- to provide a smooth surface,
and to provide one that radiates heat specificly to the bottom of the
loaf.
Keeping that in mind, I'd want a piece of polished stainless at least
1/4" thinck, and probably 3/8". Thicker would work to, but now you're
getting to the point where you oven racks may not be able to bear the
weight.
Personally, rather than do that, I'd build a tandoori oven.
