i would think wood be a good first choice. the reason i
say that is that take for example kentucky whiskey bourbon.
kentucky whiskey bourbon literally takes all its color and
flavor from the charred oak cask. basically, the bourbon
distiller, makes a solvent to dissolve the resins in the
charred oak cask which are what really make bourbon.
