Why do you think that it is the ferrous ion, not the ferric ion formed? The solution is red, which suggests ferric.

HCl plus Fe results in Ferrous Chloride (FeCl2) not Ferric Chloride (FeCl3)
I assume that when it will dissolve no more Iron it isn't very useful to
etch iron...
Although it appears you can turn Ferrous Chloride into Ferric Chloride by
adding Chlorine:
FeCl2(aq) + Cl2(g) * FeCl3(aq)

Buy a jug of muriatic acid. Add scrap iron. (Flammable, explosive
hydrogen gas will be given off, so do this outside, using a container
not tightly sealed.) When acid will dissolve no more iron, the red
solution is Ferric Chloride.
