If it was me and it was a one time event I would hire a group that was 
already set up. There are guys around here who do pancakes and other 
guys that do pig roasts. It would probably be more fun for you if the 
heavy lifting was being done by someone else. Then you can enjoy the 
party.

Then again sometimes a "campfire and a can o' beans"  is all you need.
