oil going rancid is (in my opinion) an example of overthinking the 
subject. If the micron thick coating of olive oil (or any oil) was to 
go rancid what is the worse case scenario? How complicated can it be to 
put a little oil on a spoon? Should you send to Sicily where the olive 
oil was pressed to get the Material Safety Data Sheets (MSDS) on olive 
oil?
