Some physics-geek friends built a mass spectrometer when I was in high
school.  It worked as proof of concept and method so it's doable.  But
I doubt its practicality for daily use unless you have access to a
junkshop where lab equipment and pilot plant jury-rigs go to die.
(There was one such place in or near Marblehead, Mass., not much use
to you.)

Probably be easier to build some strength testers, measure force
requires to bend, to snap at a notch, to torque beyond elastic limit
or to fracture etc.
