You are probably right that a theremocouple pyrometer won't handle the
temperatures you want, but I still consider them useful, as most of
our
work is done in the range they can handle.
 
An IR pyrometer can measure temperture of objects that are not visibly
glowing (from heat).  You don't need that sophistocation because at
the
temperatures (~2500 F) you want to measure, the forge will certainly
be
glowing hot.
 
Here's an alternative:  An optical pyrometer.  I have not built one
myself, but this is the way I would go if I wanted another pyrometer.
