[TheForge] heat treating S-7/"packing"

So this brings to mind what I've seen in several tool making books:
When you make a cold chisel, supposedly you finish forging by "packing" it
as it passes critical. In other words, do the forging at the appropriate
color and give it a few accurate whacks to further refine the grain while
it's cooling.
Any comments on this?
I've noticed that P. Ross tends to do the final forging down into black to
minimise scale and get the best finish, so I wonder if this also affects
grain size.
Also, all this discussion makes me want to just make tools out of S7 using
the grinder, and forget the forge for that...
