A variac changes the voltage to the motor and most AC motors don't like low
voltages and get hot and decide to boog down or stop when the voltage gets
to low. You can find speed control setups for AC motors that are designed
for that type of use it only takes $$$$$$$$$$$$$$$$$ or money.
