As I understand it, microwave ovens work by causing excitation of the
water molecules, so as the water content in the material decreases, the
effectiveness of the microwave oven in eating do too. However, I can't
think of a mechanism where the diminishing H2O content would harm the
magnetron tube. I have repaired many microwaves, and scrapped many
more for the transformers, but am not an expert, so am interested in
hearing how the magnetron might be affected.
