I have made a number of eating forks for camping.  I have always 
polished them out to a mirror finish for the eating surfaces, and kept a 
light coat of vegatable oil on them.  The mirror finish alone helps them 
resist rust, but the oil is very much required.  Periodically, I have to 
repolish.   This is essentially how high carbon knives were done prior 
to the introduction of stainless in the kitchen.   Probably not what you 
are looking for.   I have also looked at electroless nickel plating, but 
have not tried it yet.
