The Delsteel site also lists S7 as follows:

      Best all around hot work tool steel
      offering high resistance to impact,
      wear and fatigue at temperatures up
      to 1000=B0F. Air hardening and simple
      to heat treat with minimum
      distortion.

      Special rivet sets, bull dies,
      punches, forging dies, mandrels and
      pneumatic chisels subject to high
      temperatures.

Oops, I think you made a little goof.  The S7 is air hardening (see=20
abouve), S5 is Oil or Water hardening (see previous post).
