for powder coating they use a dry particle zinc.... (gets put on using the
same process as the coat, it is aerated near a charged piece and gets pulled
to the piece by the charge.......) then they bake it and it sets........
the zinc layer is thicker than the coat layer and if you have very fine
detail you will lose some........ but on a furniture scale this is
negligible......
i would figure that spray galvanizing (from a can) would not work well.....
any solvent left under the surface would boil out during the bake and cause
blemishes in the finish coat.......
guess i'm up to 4 pennies now ;-)

Do you know if the spray galvanizing paints qualify, or does it have to be
a plating or hot dip application of zinc?
