Recipe:
5 pounds of fresh Ham hocks
Cracked peppercorns to flavor
A clove of garlic if desired
Salt to flavor
Water to cover
Boil the Ham hocks for several hours, replacing water in the pot as needed.
After Ham hocks are at the meat falling off the bone stage, remove the meat
by shredding or cutting. Cut up skin or remove and discard as per
preference. Return to pot. Discard bones.
After a return to a boil, pour contents into a pan. A cake pan is typical.
Allow to cool in a refrigerator.
The Gelatin released from the bones will cause the liquid to gel, and the
fat will float to the top. After the fat hardens, remove it, and there ya
go. Great with a little vinegar. High protein, low fat piggy goodness.
My XYL calls it "Pigs foot Jello", and yeah, she refuses to eat it. For
those brave enough, it's pretty darn tasty.
