Actually most sausages seem to do better at around 95 volts than they
do up around 120 volts. The slow cook process is the way to go.
Most modern electrical gear is designed for voltages well above the
95 volt point. I would worry about anything with a motor in it. Pop
goes the starter winding if nothing else ....
An R-390 should do just fine. They designed them for voltages a lot
lower than the 120 volts we commonly run these days.
