Matrix, when combined with the Element web interface (or desktop/mobile
apps) is a great solution. It does require some configuration to set it
up, esp if you want it to be a standalone (non-federated with the rest
of matrix) installation.
Matrix does support end to end encryption and two-party calls as well,
though you have to be prepared for the additional key management steps
that come with that. For more than two parties on a call, integration
with the Jitsi Meet videoconference server is available.
