Yes, the Windows 7 with Microsoft Office will save as a pdf. You create 
whatever you want, with the orientation set to landscape. Save as a pdf, It 
will save (and open) as a pdf in the landscape format. Just tried, to make 
sure.

MS word, depending if you have windows 7 office suite,  I do not know
about office with XP,  can save all the text in a single pdf file.
