[Milsurplus] More cap confusion

With ac motors, the starter capacitor supplies phase shifted power to 
another winding and is sometimes disconnected by a centrifugal switch once 
the motor spins up.  For dc motors, the "starter" capacitor is used to 
supply a reservoir of current which reduces the effects of the line drop 
during the starting high current serge.

I have found many reverences for "motor starting capacitors" but these
are usually several tens to several hundred uF and recommended for
refrigerators, etc. Is the issue 12 VDC versus 120 VAC? My fridge motor
is far beefier than most dynos I have..................vas gibst?
