120/240  is single phase, center tapped, with the center tap as neutral.
115/208 (or 277/480) is three phase wye, with the center as neutral and 115 
(277) from each leg to neutral, with 208 (480) between legs.
People often mistakenly refer to 120/240 as "two phase", but true two phase 
pretty much died in the forties, and is quadrature (90 degrees)
Delta connections are primarily used in power transmission, when it is 
transformed for use, it is generally wye connected.
Most modern military generators 5KVA and above can be connected for 115/208 
wye or 120/240 single phase, this is sometimes accomplished with a switch, 
and sometimes at a terminal board. The choice is dependent upon the type of 
load contemplated. Comm shelters usually need three phase, and a group of 
tent used for living spaces is probably going to use single phase.  The 
generator weill typically source more power and generate less waveform 
distortion when connected for three phase.

No, it could be 120/240 3-phase 3-wire.

USUALLY you have 240 volt 4-phase, BUT, if you connect
the windings at the mid-point and parallel them you
can get 120 volt 3-phase in a delta configuration.  It
would give you three 120 volt circuits easily right
off the genset.
