Is your variometer coil in series with the top of the main coil or
connected the middle?  The reason I ask is that I initially had a PVC
axle on the variometer.  It probably didn't extend out as far as yours. 
When I touched the PVC the current would change.  I changed to a wooden
rod, broom handle I think it once was, and did not see any change when I
touched the axle.  I know from microwave experiences that not all PVC is
created dielectricaly equal.  

I now tune my coil by pushing on the variometer coil with a fiberglass
stick which started it's life as a bicycle flag rod.  It's about 5 feet
long which is just long enough to keep the coil from "seeing" me while
it's being tuned.  I once had grandiose plans to motorize the tuning. 
One day maybe.
