Ray -- 'the competition' as Ed is activating some of your previous sites. Actually this guy does some pedestrian and quick-setup operations as a hiker -- visit his website for info on his antennas - likely he has some ideas. (you could even arrange to meet him on the trail).
I remember that W3FF the buddi-pole guy once used a TS-50 as his pedestrian mobile rig. the FT-100 was a nifty rig in its day also. maybe Icom currently has the best full-featured small rig -- but these things cost as much as a medium-priced big box for the shack (or RV) type rig. also you must consider how long you want to talk/cw before your batteries are depleted for this kind of operation.
There is also Paul out in Colorado who does lots of pedestrian mobile with 'spy replica radios' and also old military tactical radios.
If I had to guess, a ~ 20 watt PA with some kind of lower current SSB/CW rig would give the most battery life and be good for SOTA or NP style operations.
