Use caps with a voltage rating of at least 25% over the supply to the stage.
So if the stage uses 350V, use 450V cpas.
If it uses 250V supply then use 350V caps or better.

Any place they used a 500 pF coupling cap between stages,
go ahead and use a  0.01 uF and you will be amazed how much the bass improves!
