Steve,

No question about it. 

Ubuntu / Kubuntu is the way for a newbie to go. 

It's ubiquitous, and help is also everywhere.

The [main] difference between Kubuntu and Ubuntu is the desktop.

The "K" in front of Ubuntu means that it uses the KDE GUI. and the
plain vanilla Ubuntu uses Gnome GUI.

Since you're just starting out, it shouldn't matter which GUI you choose. 

Whichever one you get used to ought to do just about anything the other 
will.

Later, after the culture shock wears off, you might want to try the 
other GUI.
