If there is a hack, we would first need to know what program you're using. In the full version of Outlook, you can prefix each line with just about anything you want - it's an setting in the e-mail "reply" options.
BTW, the ">" symbol is pretty much standard for prefixing forwarded/reply text. Use of anything else might end up confusing people.

What if I don't like any of those sysbols?
What's the hack to change it to something I like?
