Almost all or maybe all of these rust removers use one of about
four ingredients that are classified in chemistry as reducing agents.
The reduce the state of oxidation of metals toward the original metal.
Photographic developers are reducing agents of a special kind.
Those that seem most often used to remove rust are:
Phosphoric acid, used in Naval Jelly. Also used as a flavoring agent in
some soft drinks like cola drinks.
Oxalic acid, found in Barkeeper's Friend and Zud
Citric acid (found in lemon juice). Tarn-X uses a form of citric acid.
For more about these see:
http://hubpages.com/technology/Rust-removal-by-chelation
Another form of Tarn-x uses acidified thiourea. A patent for a thiourea
rust remover appears here
https://www.google.com/patents/US20040102344
and another here
https://www.google.com/patents/US4381249

Any of these methods can cause considerable damage to objects being
treated. Probably those using oxalic acid are least damaging.
The first link suggests soaking in a solution of molasses. It is
very slow but will not damage things and evidently works well.
One can find much more on the web.
