I've wanted to do the same thing with my unit. Unfortunately other projects keep bubbling up ahead of writing a little bit of code and doing it myself.
A couple of links:

"3DfixLCD" -- this is simple, someone has done the work, and I had a few spare 16F688s. It kinda worked, (LCD display ok, pushbuttons OK) but never decoded NMEA data from any of several GPS devices. I still haven't ruled out that maybe it's just me.

"ROVERBOX - display unit a stand-alone GPS module monitor"
No experience with this unit.

"A GPS Display for Headless GPS Units"
No experience with this either, but it's simple and has a bare minimum of parts. "Details and code can be supplied on request."
