Well... you COULD... BUT can you GUARANTEE that neither you, nor any other 
builder, will always be dimigent enough to NOT allow ANY of the windings to 
touch either other, or adjacent components, and that you'll never 
accidently corss two turns, thus causing them to short out to each other 
(in turn lowering the inductance)?

Try it just once and you'dd see the wisdom in using enameled wire.

Also, try it with non-heat-strippable enamel-coated wire and you'll also 
see the wisdom in using heat-strippable enamel as well.
